Beets

 
Beets - Cooking Methods

Baking
Wrap beets individually in heavy-duty foil. Place on oven rack in a 375 degree oven.
Bake until tender throughout when pierced (1 to 1 1/2 hours)

Boiling
In a 4 to 5 quart pan, boil 1 1/2 to 2 pounds beets, covered in water until
tender throughout when pierced (20 to 45 minutes.) Drain.

Preparation
To prevent beets from bleeding during cooking, boil or bake them unpeeled. After cooking, let cool then trim off roots and stems and slip off skins.  To avoid staining your hands, slip skins off under cold water.

Usage
Use shredded raw or cooked beets in salads.


Beet Greens
Beet greens have an earthly flavor (like spinach) and provide plenty of vitamin A and potassium. Coarsely chop beet greens and butter steam up to 5 cups, using 2 tablespoons of butter. 
Cook, stirring, for 1 minute.  Add 1 to 2 tablespoons liquid, cover, and cook until greens are
just tender to bite (2 to 5 minutes.)
